Apple Galette with an Almond Crust

Apples and almonds are a lovely pair. Feel free to add a few dashes of cinnamon.

Ingredients
About 3 Apples
3/4 cup Almond Flour
1/4 cup Coconut Oil
2 1/2 tablespoons Coconut Sugar
1/2 tablespoon Cornstarch*
1 teaspoon Vanilla extract
1/2 tsp Salt
Method
Mix together flour, salt, and 1 1/2 tablespoons of coconut sugar. Add coconut oil and 1/2 a teaspoon of vanilla extract to the mixture. Mix and roll dough into a ball. Cover, and place dough in the fridge.
Preheat your oven to 400 degrees.
In a medium bowl, toss apples with remaining sugar, cornstarch, and vanilla extract.
Remove dough from fridge and place between two pieces of parchment paper. Roll the dough into a round circle, and then carefully slide the dough onto a backing sheet.
Spread apple mixture evenly in the center of the dough. Fold the outer edge of the dough over filling. This will messy.
Bake for about 20-25 minutes, or until golden brown. Let cool 10-20 mins.
