Green Cabbage Rolls

A festive dish for the holidays! Pairs well with a bitter and acidic salad.

Ingredients
½ cup French lentils
1 piece of Kombu seaweed
3 bay leaves
1 tbs balsamic vinegar
2 carrots
1 fennel
2 parsnips
4 shallots
1 head broccoli
2 tbs rosemary
2 tbs sage
1 tbs thyme
Sea salt & Pepper
1 head cabbage
½ cup raw walnuts
¼ cup raw pine nuts
2 tbs unpasteurized mellow white miso
1 tbs Dijon mustard
5 tbs extra virgin olive oil
5 tbs chickpea flour
1 tsp tamari
1 tbs naturally fermented mirin
1 tbs brown rice vinegar
1 tbs nutritional yeast
Method
Cook the lentils in a medium pot and cover with water. Bring to a boil with kombu and bay leaves. Lower heat and simmer for 30minutes, covered.
Pre-heat oven to 400 degrees Fahrenheit. Mix vegetables with herbs, 3 tbs of the oil, and salt. Spread over tray lined with parchment paper. Roast for about 30 minutes or until browning at the edges.
Add 2 cups of water, walnuts, pine nuts, miso, mustard and a spinch of salt to a food processor, and blend until smooth.
Warm remaining 2 tbs of olive oil in a pot, over medium heat. Add chickpea flour and begin to stir constantly. Once fragrant, slowly pour in walnut milk mixture and whisk until thick and smooth. Continue cooking for 4 to 5 minutes. Add tamari, mirin, brown rice vinegar, salt, and nutritional yeast.
Steam each cabbage leaf for 2 minutes. Set aside to cool. Place a leaf face down and trim thick stem until leaf lies flat. Repeat with all cabbage leaves.
Drain lentils, remove kombu and bay leaves. Stir together lentils and roasted vegetables in a large bowl.
Lay a cabbage leaf face up. Add béchamel sauce to the bottom of the leaf. Top with vegetable lentil mixture. Lift bottom of leaf up and over filling, fold in both sides and roll up. Place cabbage roll seam side down in dish and repeat with remaining cabbage leaves. Place cabbage rolls in baking dish brushed with olive oil.
When ready to eat preheat oven 375 degrees Fahrenheit. Bake rolls for 15 minutes. Turn on broil to medium high and broil for 4 to 5 minutes. Serve warm.
