Kale Salad with Lemon-Olive Oil Dressing

Hearty kale paired with a lighter lemon vinaigrette and toasted almonds. It's a deliciously nourishing combination.

Ingredients
2½ cups sliced almonds
3 lemons
1½cups high quality extra-virgin olive oil
4 garlic cloves
One good bunch of Dino Kale
Salt
Method
Toast almonds in a pan until brown.
Whisk lemon juice and a heaping teaspoon of salt. Slowly add olive oil. Peel garlic cloves, smash, and add them whole. Set aside dressing to steep. Dressing can be made a day or two in advance.
Remove thick stems of kale, and cut into ribbons.
Massage kale with about half of the dressing (garlic cloves removed). Toss in toasted almonds. Add more dressing or salt as needed.
