Lemon Garlic Pasta

A magical combination of creamy tofu, garlic, and a pop of lemon. Quick and delicious!





Ingredients

3-4 cloves of garlic, peeled

1 lemon, juiced

1 (16oz) package of silken tofu

dried basil, coriander, oregano, salt, pepper to taste

dry pasta


Method

Blend ingredients together. Cook pasta, drain, and add back to pot. Stir in sauce and heat until warmed through, adjust seasonings to taste. Top with fresh veg.


I used Banza gemelli pasta and cherry tomatoes!
