Ingredients
1 block of firm tofu, cubed
Chopped herbs (cilantro, mint, parsley... whatever you have lying around)
2 shallots or 1/2 of a red onion, finely chopped
Juice from 1/2 lemon
Olive Oil
Salt and pepper
Recipe
Add 1-2 tbsp of oil into a pan.
Sear tofu for about 2 minutes on each side until light brown.
Add tofu to a medium bowl and let cool for a couple of minutes. Once cool enough, rip each cube in half.
Pour in another tablespoon of olive oil and stir in chopped herbs, shallots or onion, and lemon. Season with salt and pepper. Add more olive oil as needed.
Serve over rice or mixed greens.
