Pumpkin Muffins

A simple treat for the fall. Top with chopped walnuts or pumpkin seeds.

Ingredients
2 cups of whole wheat flour
3 tsp of pumpkin spice
11/2 tsp baking powder
Dash of cinnamon
Dash of salt
1/2 tsp baking soda
1 can pumpkin puree
1/2 cup maple syrup
1/2 cup nut milk
2 tsp vanilla extract
1 tsp of apple cider vinegar
Method
Preheat oven to 375 degrees.
Mix together dry ingredients. Slowly add in wet ingredients. Add walnuts, seeds, or other toppings at this stage.
Let cook for about 25 minutes, and then test with a toothpick. The muffins are fully cooked once a toothpick comes out clean.
Let cool on a rack for at least ten minutes. Serve warm!
