Warm Stuffed Peppers

Ingredients

1 red bell pepper

1/2 cup black beans

1/4 cup chopped onion

1 tbs fresh cilantro

Salt and pepper to taste


Method

  1. Preheat oven to 350 degrees Fahrenheit. Cut stem and remove seeds of pepper. Mix together beans and onion in a small bowl. Fill pepper with bean mixture.

  2. Wrap stuffed pepper in aluminum foil. Bake for about 30 minutes. Remove foil from the top of pepper and broil for 4-5 additional minutes.

  3. Remove pepper from oven, unwrap, and top with cilantro, salsa verde, salt and pepper.
